In this tutorial, I will be showing you how I made the baby dedication cake above. This cake features fondant dove toppers and intricate ruffles on the bottom tier. This cake is one which requires a lot of patience especially with the bottom tier. To see other views of this cake and have access to recipes used, click here.

THE PROCESS:

(1) First, make the doves and leave them to dry. A pictorial on how they were made can be found here.

(2) Make the brooch for the bow. You can use any type of brooch here. I have some brooch tutorials here, here and here. Also make the fondant cross for the top tier.

(3) Cover a cake board with white fondant. Drape the bottom tier with white fondant and stick to the cake board.

(4) Next, work on the ruffles. See this post for a tutorial on how to make the ruffles on the bottom tier.

(5) Insert dowels into the bottom tier. Drape the top tier with pink fondant and stack it on the bottom tier.

(6) Next, make the bow. Cover the base of the top tier with 1 inch white fondant with stitched sides. Stick bow tails to the front of the cake. Make the bows and stick to the front of the cake. I made the bow using my method for making bow ties. Brush the bow with white pearl dust mixed with a bit of vodka. Finish the bow with the brooch.

(7) Stick the cross to the front of the cake.

(8) Place the toppers on the cake. Due to their weight, I inserted dowels in the top tier so the doves do not press on the cake.

That’s all there is to it. Happy caking!
