Fondant Gavel Tutotrial

This is a tutorial on how I made the gavel in the law review cake above. The process is quite simple and straightforward but the elements do need time to dry properly.

TOOLS:

(1) Round Cookie Cutters of Various Sizes

(2) Thick Floral Wires

(3) Pizza Wheel or Sharp Blades

(4) Paint Brush

(5) Rolling Pin

EDIBLE COMPONENTS:

(1) Fondant

(2) Water

(3) Vodka

(4) Color Paste

(5) Gold Luster Dust

(6) Melted White Chocolate (or any other gluing agent of your choice)

(7) Shortening to help during molding.

PROCEDURE:

(1) Mold the various parts of the gavel. These include 7 circular pieces for the head, 2 smaller circular pieces for the handle, and a long piece for the handle. All of these pieces were shaped by hand. Round cookie cutters were however used as guides for the circular pieces. The picture in Note 2 below gives a better view of the thickness of each piece and sizes in relation to each other. Make these a day ahead of assembling. I would suggest that you make the long handle a couple of days before making the other pieces. This would give it some time to dry before assembling which in turn would help in avoiding the bend noticeable in mine.

(2) When the pieces are dry enough to handle without them losing shape, assemble the head pieces together using melted white chocolate.

(3) Insert floral wires into both ends of the handle. Assemble the handle. The piece at the end should cover the floral wire entirely. The piece at the top should leave some exposed floral wire. This would be inserted into the head.

(4) Roll out ivory fondant and cover desired portions of the head and handle with it. The portions with ivory fondant would later be colored with gold pearl dust mixed with vodka.

(5) Insert the handle into the middle of the head. Place some fondant underneath the elevated portion of the handle for support and leave the gavel this way to dry thoroughly.

(6) When the gavel is dry and the cake has been decorated, transfer the gavel to the cake board or cake itself and color the ivory portions gold.
