Cupcake cakes are becoming more and more popular. They give you the benefit of having individual cake portions within the concept of a large cake. They are an especially great way of presenting cakes at school or daycare parties. There are many ways of making cupcake cakes. While some are designed with buttercream frosting, some are designed with fondant.

PROCEDURE:

(1) The topper has to be made more than a week ahead of time so it has time to harden. It can be made up to 2 weeks in advance and stored when properly dry. The first step is to roll out your fondant to the size of your cake board. The fondant should be thin as you want the topper to be light so as not to compress the cupcakes.

(2) Your cake board should determine the size of the topper. The size of the cake board in turn is determined by the number of cupcakes. Cut out your topper. You can make some circular patterns at the edges for some more effects. Allow this topper to dry for some days before painting and decorating it. Run a flat knife under the topper about once a day to ensure it does not stick to the cake board or drying surface.

(Sorry no pictures here. My decision to do a tutorial came after I had started the process)

(3) When the topper is dry enough to lift, transfer it to a wire rack. This will enable air to dry it from beneath as well as above.

(4) Now begins the process of painting and designing. I painted the topper blue and green for sky and field and started designing until I was satisfied. Alternatively, you can color your fondant blue from the very beginning. I made Sofia by printing out pictures and using them as templates for cutting out fondant pieces.

(5) When you are done with the topper, leave it to dry. Meanwhile, cover your cake board with fondant and cover sides with a ribbon.

(6) Bake cupcakes in sturdy cupcake cups. You want the cupcakes to be the same level so the board sits on them evenly.

(7) Frost cupcakes using a knife or spatula. You want the frosting to be leveled too so the cupcakes are even. I stuffed the middle of the cupcakes with frosting to make up for the less frosting on the cupcakes.

(Again, no pictures. I was tired at this point in time)

(8) After frosting, cover the cupcakes with round or ruffled fondant. You can use a cookie cutter to cut this out. This extra fondant topping is to make sure the topper does not come in contact with the buttercream frosting, thereby making a mess. I also wanted the celebrant to go home with the topper and have fun with it, thus I needed to ensure that it reminded clean. The sugar pearls in the middle of each cupcake are only an extra measure to prevent the topper from sticking to the cupcake fondant covers.

(9) Arrange the cupcakes on the cake board and place the cupcake topper on the cupcakes. Make sure the cupcakes are tucked under the topper.
