Pasta Stir-Fry

Stir-fries are quick and easy dishes which make perfect dinners after busy days. While most stir-fries are made with rice, you can always change it up and use any starch of your choice. In this recipe, I have used pasta, specifically Orzo pasta which is a short pasta the size of long grain rice. Toss it with a few veggies and proteins of your choice and you will end up with a delicious meal which can be enjoyed by everyone.

INGREDIENTS:

(1) 250 Grams Pasta

(2) 3 Tablespoons Extra Virgin Olive Oil

(3) Mixed Veggies

(4) 2 Chicken Breasts

(5) 2 Cloves of Garlic (Grated)

(6) 1/2 Teaspoon of Fresh Ginger (Grated)

(7) 1/4 Cup Scallions

(8) 2 Teaspoons Sesame Seed Oil

(9) 2 Teaspoons Soy Sauce (Light or Dark)

(10) 1/2 Teaspoon Fresh Thyme

(11) Salt and Pepper to taste

PROCEDURE:

(1) Wash, dry and chop chicken into cubes. Add grated ginger, grated garlic, salt and pepper and mix to coat chicken with spices.

(2) Chop veggies into desired size. I am working with Orzo pasta here and thus chopped my veggies into small cubes. The types of veggies you use is totally up to you. Here, I used scallions, green bell peppers, celery and carrots.

(3) Boil water in a large pot. Season the water with salt and cook pasta. See notes here on how to cook pasta correctly. Orzo pasta takes about 7 minutes to cook. Time the cooking of the pasta so that it is ready at the same time as the stir-fried veggies.

(4) In a very hot wok, heat 2 tablespoons of olive oil until hot.

(5) Add the chicken to the olive oil and saute until the chicken is cooked, about 5 – 10 minutes, depending on the size of the chicken. Transfer chicken to a bowl.

(6) Add the last tablespoon of oil to the wok. Add all the chopped veggies and thyme to the oil and saute for about 2 minutes. Your aim here is not to cook the veggies through. You want to maintain some crunch.

(7) Add the cooked pasta, chicken and soy sauce to the wok and stir to mix the ingredients together. Taste for seasoning and adjust accordingly. Always keep it in mind that say sauce has a lot of salt in it.

(8) Take the wok off the heat source, add the chopped scallions and sesame seed oil to the stir-fry, mix and serve. You can sprinkle some sesame seeds on top of the plated dish if you so desire.

BONUS RECIPES:

(1) Bulgur Wheat Stir-Fry

Soak the bulgur wheat in how water or broth for 30 minutes, drain the water and follow the recipe above for the rest of the procedure. I used shrimps here in place of chicken.

(2) Barley Stir-Fry

Rinse a cup of the barley in water. Place the barley in a pot along with 2-1/2 cups of water or broth, bring to a boil and cook on low heat for 40 minutes. Follow the recipe above for the rest of the procedure. I used liver here in place of chicken. If you want to use liver, make sure you boil and chop it before sauteing.
