How to Blanch Almonds

Almonds are the most common nuts used for baking. It is used in fruitcakes and fruit breads like stollen and panettone. In its powdered form, it is used to make macaroons, marzipan, frangipane, cakes, and biscuits. Most times, a recipe will call for blanched almonds. Blanched almonds are also used to make almond flour. Though you can easily find blanched almonds to buy in stores, they are more expensive than whole almonds. In this post I will show you how to blanch almonds yourself.

 INGREDIENTS:

(1) Whole Raw Almonds

(2) Hot Water

TOOLS

(1) A Bowl

(2)  A Sieve

PROCEDURE:

(1) Boil some water.

(2) Place raw almonds in a large bowl and pour the hot water over them. Make sure they are completely submerged underneath the hot water.

(3) Soak them in the hot water for 1 minute. If you soak them for more than a minute they will get soft. Please time this process.

(4) After a minute, pour the almonds into a sieve to drain the hot water. Immediately run them under cold water to halt the cooking process.

(5) Turn the almonds into a bowl and slide the skins off using your thumb and index finger. The skin should slide off easily.

(6) You can use the almonds now. If however you want to make almond flour with it, you might need to spread the almonds on a tray so they dry properly before blending.

(7) Store dried blanched almonds in an air tight container.
