Tuxedo Strawberries

Strawberries (check), Chocolate (check)…Take a big bite, crack through the decadent chocolate shell and sink your teeth into the juicy mouth-watering strawberry. What else could anyone ask for? These decadent treats make such an impression!

INGREDIENTS:

(1) A dozen strawberries

(2) 4 Ounces White Chocolate (113 Grams)

(3) 6 Ounces Semi-Sweet Dark Chocolate (170 Grams)

(4) Sugar Pearls (Optional)

PROCEDURE:

(1) Wash and groom strawberries. Trim off any dead leaves. Each strawberry must be treated individually.

(2) Dry strawberries thoroughly. Water is not your friend when dealing with chocolate.

(3) Melt white chocolate. I melt my chocolate by putting the chocolates in a bowl and placing the bowl over simmering hot water. If using this method, be careful that water does not get into the chocolate or else it will make the chocolate seize. Stir the chocolate at intervals. It helps to chop the chocolate into small bits. NOTE: You can also melt the chocolate in your microwave oven. Do this a few seconds at a time so as not to burn the chocolate.

(4) Transfer melted chocolate to a smaller deeper bowl. This way you can dip the strawberries into the chocolate.

(5) Cover a baking sheet/cookie tray with parchment paper.

(6) Dip one side of the strawberries into the melted white chocolate, allow as much chocolate as possible to drip back into the bowl. This will prevent it from forming a pool at the base of the strawberries. Place strawberries on parchment paper. The dipped portion of the strawberries should be facing up.

(7) Place strawberries in fridge for 10 minutes to allow the white chocolate harden a bit.

(8) Melt dark chocolate as you did with the white and transfer to small deep bowl.

(9) Take chocolate out of fridge and dip in melted dark chocolate. Dip on both sides of the white portion so as to create a V in the middle. Allow excess chocolate to drip back into bowl and place strawberries on parchment paper.

(10) This is where you get creative. I placed remaining dark chocolate in pipping bag with a small hole for better control. Pip out dots for buttons and two interlocking triangles for  the bow tie. You can place sugar pearls on the buttons.

(11) Return chocolate covered strawberries to fridge for 30 minutes so the chocolate can set. Enjoy with a bottle of champagne…because life is a celebration.

PS: You can dip other fruits in the leftover chocolate. I dipped some raspberries and decorated them with silver sugar pearls.
