Greek Salad

Also referred to as Rustic or Summer Salad, Greek Salad is a salad in Greek cuisines. It primarily consists of chopped tomatoes, romaine lettuce, cucumber, olives, bell peppers and feta cheese. It is dressed with a simple olive oil and lemon dressing and flavored with salt and oregano. It is fresh, somewhat complex and surprisingly flavorful.

INGREDIENTS:

(1) Small Head of Romaine Lettuce

(2) 1 Cucumber

(3) 2 Medium Sized Tomatoes

(4) 1 Bell Pepper

(5) 1 Medium Sized Red Onion

(6) A Handful of Pitted Black Olives

(7) 1 Cup Cubed Feta Cheese

(8) 4 Tablespoons Extra Virgin Olive Oil

(9) 1 Teaspoon Dried Oregano

(10) 2 Tablespoons Lemon Juice

PROCEDURE:

(1) Wash and dry the Romaine lettuce. Tear into smaller pieces and place in salad bowl.

(2) Cut the red onion into rings. Remove seeds from peppers and tomato and chop into cubes. Chop the cucumber into cubes too and add all the ingredients to the salad bowl along with the pitted olives.

(3) Cube the Feta cheese. An optional step is to coat the cheese with some olive oil, oregano, salt and pepper for extra flavor.

(4) In another bowl, make dressing with olive oil, lemon juice, oregano, salt and pepper.

(5) Add dressing to salad and toss to coat veggies with the dressing.

(6) Serve salad and top with Feta cheese.

Leftover salad should be stored in the fridge. Note that the veggies will release some water as they sit.
