I never get tired of Banana Bread. It is rich, smells great, tastes amazing and gets better with age. I do have a fantastic banana bread recipe which can be found here. This recipe however takes it notches higher by incorporating lemons in 3 ways into the banana bread. It also makes use of brown sugar and pecans which gives it a hint of nuttiness and caramel. It is a flavor explosion.

INGREDIENTS:

(1) 400 Grams Banana (About 3 Large Fruits)

(2) 260 Grams All Purpose Flour (2 Cups)

(3) 1 Cup Pecans

(4) 2 Large Eggs

(5) 113 Grams Unsalted Butter (1/2 Cup)

(6) 155 Grams Brown Sugar (3/4 Cup)

(7) 1 Teaspoon Baking Powder

(8) 1/2 Teaspoon Baking Soda

(9) 1 Teaspoon Grated Nutmeg

(10) 1 Teaspoon Pure Vanilla Extract

(11) 1/4 Teaspoon Salt

(12) The zest of 1 Lemon

(13) 2 Tablespoons Lemon Juice

For Lemon Glaze:

(1) 2 Tablespoons Lemon Juice

(2) 1 Cup Icing Sugar

PROCEDURE:

Preparing Bananas: Ensure that you make use of very ripe bananas for this recipe. Place bananas in freezer for at least 24 hours. They would darken and be frozen solid. Take bananas out of freezer and allow thaw. This can be done overnight in the fridge. Peel bananas and place in a bowl. Mash them along with 2 tablespoons of Lemon juice. This can be done in a blender or food processor, with an immersion blender or just a fork.

(1) Preheat oven to 350 degrees.

(2) Grease an 8 by 4 inch loaf pan. Set aside.

(3) Melt butter in microwave or in a sauce pan. Allow to cool down a bit.

(4) Toast Pecans for about 8 minutes or until fragrant. This can be done in a pan over open flame or in the oven. Chop toasted pecans.

(5) In a large bowl, mix together the flour, brown sugar, Lemon zest, grated nutmeg, baking flour, baking soda, salt and chopped pecans.

TIP: if your brown sugar is dry, hard and clumped together, do not despair. Place it in a microwave sage bowl, cover with a damp paper towel and place in the microwave. Heat at 30 second intervals until it softens.

(6) In another bowl, mix together the Eggs, melted butter, Vanilla extract and Banana-Lemon mash.

(7) Pour wet ingredients into dry ingredients and mix to combine. Do not over mix.

(8) Pour batter into prepare loaf pan and bake in preheated oven for 1 hour or until a toothpick inserted into the middle comes out clean.  Take loaf out of oven and place on a wire rack while you make the Lemon glaze.

(9) Make Lemon Glaze. Mix together the lemon juice with the icing sugar. Brush the glaze on the loaf and place back in the oven for 1 minute.

(10) Take bread out and allow to cool down completely.

This bread is best the day after making.
