Instant Noodles (Upgraded)

I almost never eat canned/packed or processed foods. The nearer a meal is to its original state, the more likely it is that I would eat it. I however recently stumbled on a packet of 2 minutes instant noodles and challenged myself to elevate it to a restaurant quality meal. I added some fresh vegetables, protein and fruits to it and was very happy with how it turned out. This is my take on instant noodles.

INGREDIENTS:

(1) 1 Packet Instant Noodles

(2) Lamb (Or Beef)

(3) 1 Plantain

(4) Vegetables (I used Carrots and Green Beans)

(5) Scallions (Green/Spring Onions)

(6) 3 Tablespoons Olive Oil

(7) Salt and Pepper to taste

PROCEDURE:

(1) Season and boil meat until tender. Cut boiled meat into bit sized chunks. (Save broth for future meals)

(2) Cut plantains into cubes. You might only need half of a plantain for a pack of instant noodles.

(3) Chop the other vegetables and scallions. Separate white part of scallions from the green leafy part.

(4) In a frying pan, heat the olive oil and fry the meat until golden brown. Remove fried meat and drain on paper towel.

TIP: You do not need more than the stated amount of oil to fry the meat. Saute meat as it fries to brown on all sides.

(5) While frying the meat, bring some water to boil in a small sauce pan. When it starts boiling, add the instant noodles with its accompanying spices and cook for 1 minute 30 seconds. Drain noodles and set aside while you fry the remaining vegetables. You want the noodles to still have some bite as they will cook a bit more later on. You also do not want a lot of the spice flavor as it is somewhat salty and “funny tasting.”

(6) After frying the meat, fry the plantain cubes in the same oil until golden brown and add to fried meat.

(7) Next, saute the white part of scallions for 2 minutes. Add the other chopped vegetables and saute for 4 minutes. The vegetables should still be a bit firm and not soggy and limp.

(8) Add boiled noodles to vegetables and mix with fork to separate noodles. Taste for seasoning and adjust with salt and pepper.

(9) Finally add fried meat and plantain to pan, saute for 30 seconds and take off heat. Serve immediately.
