Got some leftover pasta from a previous meal? You are in luck. This recipe breaths new left into your leftover pasta and changes it into something entirely new and inviting. The exterior is golden brown and crunchy and the interior is munchy. Its like making a thin crust pizza without all the work.

INGREDIENTS:

(1) Leftover Pasta

(2) 1/4 Cup Olive Oil

(3) 2 Eggs

(4) 1/4 Cup Parmesan Cheese

(5) Salt and Pepper (if needed)

Note: You can you any leftover pasta you have. I have used some leftover Spaghetti Aglio e Olio here. Recipe here.

PROCEDURE:

(1) In a large bowl, break your eggs. Grates some fresh parmesan cheese over the eggs and mix to combine.

(2) Add the leftover pasta to the egg mixture and mix until combined. This is one of those dishes where you need to use your hands to do the mixing so that the egg thoroughly coats the pasta. There need be egg residue at the bottom of the bowl. The mixture might look dry, but do not be tempted to ads more eggs.

(3) If the mixture needs more seasoning, then add some. Remember that the pasta was already seasoned when cooked. The Parmesan cheese also has some salt in it.

(4) Heat the oil in a non-stick frying pan. Reduce the heat to medium and pour in the pasta mixture. Use the back of your cooking spoon to flatten the pasta in the pan so it is compact. Cook on one side for 8 minutes.

(5) After 8 minutes, it is time to flip the frittata. Cover the frying pan with a flat plate which is larger than the frying pan in circumference. Flip the pan to release the frittata unto the plate. Slide the frittata back into the frying pan, return the pan to the heat source and cook for another 6 minutes.

After 6 minutes, the frittata should be ready. Serve your pasta frittata with some salad and you have the perfect weekend brunch. Bon appetite.

    Good to know Pasta can be prepared this way. I prepare noodles almost the same way with Pasta Frittata. I boil the noodles(without the spice) just until its soft enough I strain the noodle, whisk the eggs and spice, add the noodles to the eggs and fry.
