Plantain is an edible fruit grown majorly in the tropics. It looks like a banana, but with a more earthy flavor. It is sweet and can be used to make various meals. This recipe uses the plantain and combines it with ingredients like butterscotch Chips, Grand Manier and Nutmeg to create a soft flavor-filled bread that is easy to make. Best part of this bread is that it keeps very well and gets better by the day. If you have ripe plantains at home, this a great way to use them. Lets bake bread!

INGREDIENTS

(1) 345 Grams All Purpose Flour (About 2-2/3 Cups)

(2) 225 Grams Granulated White Sugar (1 Cup + 2 Tablespoons)

(3) 115 Grams Chopped Pecans (1 Cup) (Optional)

(4) 681 Grams Ripe Plantain (About 3 Large Plantains)

(5) 1-1/2 Teaspoons Baking Powder

(6) 1/4 Teaspoon Baking Soda

(7) 1 Teaspoon Ground Cinnamon

(8) 1/2 Teaspoon Ground Nutmeg

(9) 1/4 Cup Butterscotch Chips (Optional)

(10) 3 Large Eggs

(11) 170 Grams Melted Butter (3/4 Cup)

(12) 2 Tablespoons Grand Manier (Optional)

(13) 1-1/2 Teaspoon Pure Vanilla Extract

PROCEDURE:

(1) Butter or grease a 4 by 13 inches loaf pan. Set Aside

(2) Preheat oven to 350 degrees.

(3) Mash the ripe plantains with fork. They can also be mashed with a food processor or blender.

(4) Mix all the dry ingredients, nuts and chips in a mixing bowl.

(5) Mix all the wet ingredients in another mixing bowl.

(6) Create a well in the middle of dry ingredients and pour in mashed plantain and wet ingredients. Mix just until combined. Do not over mix. A few lumps is fine.

(7) Pour batter into prepared loaf pan and bake in preheated oven for 1 hr or until a toothpick inserted in the middle comes out clean. Allow loaf to cool for 10 minutes on a cooling rack. Take out of pan and slice. Enjoy!

NOTE: If using food processor, mix dry ingredients in a bowl. Place plantain in processor and process. Add wet ingredients and process till combined. Pour into dry ingredients and mix with spoon/spatula.

    Well done. Please I don’t have a loaf pan, can I use any other kind of pan? If yes, do I bake with the same temperature? Thanks
