Stir Fried Couscous

This recipe shows an easy way of preparing couscous. Couscous is a traditional Berber dish of semolina (granules of durum wheat) which is cooked by steaming. It is traditionally served with a meat or vegetable stew spooned over it. This recipe however does not need any stew as it is stir-fried with a lot of vegetables and herbs. This is a easy recipe which goes well with baked tilapia.

INGREDIENTS

(1) 3/4 Cup Couscous

(2) 1-1/2 Cups Chopped Mixed Vegetables

(3) 2 Teaspoons Butter

(4) 1 Medium Onion (Chopped)

(5) 1 Bay Leaf

(6) 2 Sprigs of Fresh Thyme

(7) 1 Cup Hot Water

(8) 1 33 Gram Concentrated Cooking Stock

(9) Salt and Pepper to Taste

Note: You can make use any vegetables you have or like. I love using carrots, celery and peas, but do not limit yourself to these.

PROCEDURE:

(1) Place the couscous in a bowl, salt and pour the hot water over the couscous. Cover and allow sit for about 10 minutes or until the couscous absorbs all the hot water.

(2) Chop the vegetables into small pieces. Use your choice of vegetables here. Also chop the onion and set aside.

(3) In a large frying pan, melt the butter. Saute the onions, bay leaf and thyme in the melted butter for about 1 minute. Add the chopped mixed vegetables, pepper and stir fry for about 4 minutes.

(4) Add the couscous to the vegetables and stir fry for another 2 minutes. Add the concentrated stock and cook for another 3 minutes.

This meal is best enjoyed hot or warm. Try it out with some baked tilapia.
