This is a simple oven roasted tilapia recipe which packs a punch. Tilapia is a fresh water fish which has its origin in Africa. Though it can be enjoyed in many ways, it is best when grilled or roasted. The lemon zest in the recipe adds to the spicy taste to produce an amazing fish dish which goes well with a lot of meals.

INGREDIENTS:

(1) 1 Large Tilapia

(2) 2 Tablespoons Butter

(3) 2 Garlic Cloves

(4) 1 Teaspoon Chili Flakes

(5) I Teaspoon Lemon Zest

(6) 1 Tablespoon Pepper and Tomato Paste (HOW TO post here)

(7) 1 Teaspoon Soy Sauce

(9) 1/4 Teaspoon Paprika

(10) Salt and Pepper to Taste

PROCEDURE:

(1) If fish has not been cleaned, scale fish, remove the entrails and cut the fins with scissors or shears.

(2) Wash fish and dry fish with a paper towel. Make slashes on both sides of fish. This will help the seasoning penetrate the fish better.

(3) Preheat oven to 375 degrees.

(4) Melt butter in a small sauce pan. Grate garlic cloves into butter and add the chili flakes, lemon zest, paprika, soy sauce, salt and pepper to melted butter.

(5) Place the fish in a baking dish. Brush the marinade all over the fish. Be sure to brush the underneath and the inside of the fish with the marinade.

(6) Place the fish in the preheated oven and bake for 20 to 30 minutes depending on the size of the fish.

This fish pairs well with a lot of meals ranging from rice to couscous, salads and plantain.
