This is a tutorial on how to make hat cakes like the one above. As you will see below, this is one of the easiest cakes to make. It also allows you to be creative. You need not use the same type of flowers and ornaments I used on this cake. This tutorial is meant to stir your creative juices. Below is another hat cake I made earlier. Although a more complicated hat cake, the ideas are similar. To get links to recipes used to make this cake, click here.

THE PROCESS:

(1) Make the feathers. Tutorial here.

(2) Make the roses. Tutorial here.

(3) Cover a cake board with fondant. Cut out the brim of the hat and place it on the cake board. You can lift an edge of the brim by placing supports underneath it and allowing it to dry that way.

(4) Drape the crown of the hat with fondant and place the crown on the brim. The crown here is an 8″ round cake. I frosted the cake and cut out the top diagonally to create the slope.

Terry thank you so much for this tutorial…I have my first hat cake in a few weeks and this is what I needed. When I looked at the white cake above, it has some texture I would like to have on my cake. Would you mind sharing how you got that look?

    Thank you again.
